  • 2 cups cooked chicken breast, shredded
  • 1 cup cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/4 cup kalamata olives, pitted and sliced
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup Greek yogurt (for tzatziki)
  • 1/2 cup grated cucumber (for tzatziki)
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried dill
  • Salt and pepper to taste

Instructions

  1. Prepare the tzatziki sauce by combining the grated cucumber with a pinch of salt and letting it sit for about 10 minutes to draw out excess moisture.
  2. Use a clean towel to wring out the cucumber and remove excess liquid.
  3. In another bowl, mix Greek yogurt, garlic, lemon juice, olive oil, dill, and drained cucumber. Season with salt and pepper to taste.
  4. In a large mixing bowl, combine shredded chicken, diced cucumber, cherry tomatoes, red onion, olives, and feta cheese.
  5. Drizzle tzatziki sauce over chicken mixture and toss gently.
  6. Serve in a bowl or plates, garnished with fresh dill or lemon wedges if desired.

Notes
