Description

These delicious and nutritious cookies are packed with wholesome ingredients, perfect for a healthy snack to keep your energy levels high throughout the day.


Ingredients

  • 2 cups Oats
  • 1 cup Nut Butter (almond butter, peanut butter, or sunflower seed butter)
  • 1/3 cup Honey or Maple Syrup
  • 2 tablespoons Chia Seeds
  • 1 cup Mixed Nuts (chopped)
  • 1/2 cup Seeds (pumpkin seeds, sunflower seeds, or flaxseeds)
  • 1 teaspoon Cinnamon
  • a pinch Salt
  • 1/2 cup Dark Chocolate Chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix the dry ingredients in a large bowl: oats, chia seeds, chopped nuts, seeds, cinnamon, and salt.
  3. Combine the wet ingredients in a separate bowl: nut butter and honey (or maple syrup), stirring until smooth.
  4. Combine the wet mixture into the dry ingredients and stir with a spatula until fully mixed.
  5. Fold in the chocolate chips if using.
  6. Form the cookies on a lined baking sheet, leaving space between each.
  7. Bake for 12-15 minutes, until golden-brown.
  8. Cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

These cookies can be stored in an airtight container for up to a week, or frozen for up to three months.
