- 2 cups Oats
- 1 cup Nut Butter (almond butter, peanut butter, or sunflower seed butter)
- 1/3 cup Honey or Maple Syrup
- 2 tablespoons Chia Seeds
- 1 cup Mixed Nuts (chopped)
- 1/2 cup Seeds (pumpkin seeds, sunflower seeds, or flaxseeds)
- 1 teaspoon Cinnamon
- a pinch Salt
- 1/2 cup Dark Chocolate Chips (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Mix the dry ingredients in a large bowl: oats, chia seeds, chopped nuts, seeds, cinnamon, and salt.
- Combine the wet ingredients in a separate bowl: nut butter and honey (or maple syrup), stirring until smooth.
- Combine the wet mixture into the dry ingredients and stir with a spatula until fully mixed.
- Fold in the chocolate chips if using.
- Form the cookies on a lined baking sheet, leaving space between each.
- Bake for 12-15 minutes, until golden-brown.
- Cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
These cookies can be stored in an airtight container for up to a week, or frozen for up to three months.
