Instructions
- Preheat your oven to 350°F (175°C). Line a 9-inch round or square cake pan with parchment paper or grease it generously.
- Combine the dry ingredients: 2 cups rolled oats, 1 cup whole wheat flour, 1 tsp baking powder, 1 tsp baking soda, 1 tsp ground cinnamon, and a pinch of nutmeg.
- Mix together the wet ingredients: 1 cup yogurt, 1/2 cup honey or maple syrup, 2 eggs, and 1 tsp vanilla extract.
- Blend the wet mixture into the dry ingredients until just combined.
- Fold in the chopped apples and nuts (if using).
- Pour the batter into the prepared pan and smooth the top.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
For a sweeter cake, adjust the amount of honey or maple syrup to taste. Serve warm or at room temperature with a sprinkle of powdered sugar, a dollop of yogurt, or a scoop of ice cream.
