  • 1 cup yogurt
  • 1/2 cup honey or maple syrup
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9-inch round or square cake pan with parchment paper or grease it generously.
  2. Combine the dry ingredients: 2 cups rolled oats, 1 cup whole wheat flour, 1 tsp baking powder, 1 tsp baking soda, 1 tsp ground cinnamon, and a pinch of nutmeg.
  3. Mix together the wet ingredients: 1 cup yogurt, 1/2 cup honey or maple syrup, 2 eggs, and 1 tsp vanilla extract.
  4. Blend the wet mixture into the dry ingredients until just combined.
  5. Fold in the chopped apples and nuts (if using).
  6. Pour the batter into the prepared pan and smooth the top.
  7. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  8. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes
