Ingredients
8 oz whole wheat or chickpea pasta, cooked and cooled
1 cup cherry tomatoes, halved
1 cup cucumber, diced
½ cup red bell pepper, chopped
¼ cup red onion, finely chopped
½ cup canned chickpeas, drained and rinsed
¼ cup feta cheese, crumbled
2 tbsp fresh parsley or basil, chopped
Dressing:
3 tbsp olive oil
2 tbsp red wine vinegar or lemon juice
1 tsp Dijon mustard
1 garlic clove, minced
Salt and pepper to taste
Instructions
In a large bowl, combine cooked pasta, vegetables, chickpeas, and feta.
In a small jar or bowl, whisk together olive oil, vinegar or lemon juice, mustard, garlic, salt, and pepper.
Pour the dressing over the salad and toss gently to combine.
Chill for at least 30 minutes to let the flavors develop.
Garnish with fresh herbs before serving.
