- 3 medium-sized Ripe Bananas
- 1/2 cup Peanut Butter
- 2 large Eggs
- 1/4 cup Honey or Maple Syrup
- 1 ½ cups Whole Wheat Flour
- 1 teaspoon Baking Soda
- 1 teaspoon Baking Powder
- 1/4 teaspoon Salt
- 1/2 cup Mini Dark Chocolate Chips (optional)
Instructions
- Preheat your oven to 350°F (175°C) and prepare your muffin tin.
- Mash the ripe bananas until smooth, leaving some small chunks for texture.
- Add the peanut butter and honey (or maple syrup), mixing until combined.
- Mix in the eggs until everything is blended beautifully.
- Combine the dry ingredients in a separate bowl: flour, baking soda, baking powder, and salt.
- Fold the dry ingredients into the wet mixture, being careful not to over-mix.
- Fill the muffin tin about ¾ of the way full with the batter.
- Bake for 18–20 minutes or until a toothpick inserted into the center comes out clean.
- Cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
