  • 1/2 cup Peanut Butter
  • 2 large Eggs
  • 1/4 cup Honey or Maple Syrup
  • 1 ½ cups Whole Wheat Flour
  • 1 teaspoon Baking Soda
  • 1 teaspoon Baking Powder
  • 1/4 teaspoon Salt
  • 1/2 cup Mini Dark Chocolate Chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare your muffin tin.
  2. Mash the ripe bananas until smooth, leaving some small chunks for texture.
  3. Add the peanut butter and honey (or maple syrup), mixing until combined.
  4. Mix in the eggs until everything is blended beautifully.
  5. Combine the dry ingredients in a separate bowl: flour, baking soda, baking powder, and salt.
  6. Fold the dry ingredients into the wet mixture, being careful not to over-mix.
  7. Fill the muffin tin about ¾ of the way full with the batter.
  8. Bake for 18–20 minutes or until a toothpick inserted into the center comes out clean.
  9. Cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
