Hearty Blueberry Protein Muffins

Description

Deliciously fluffy muffins packed with protein and bursting with blueberries, perfect for breakfast or a snack.


Ingredients

  • 1 cup whole wheat flour
  • 1 cup rolled oats
  • 2 scoops vanilla protein powder
  • 1/2 cup unsweetened applesauce
  • 1/4 cup honey or maple syrup
  • 1/2 cup milk of your choice
  • 1 large egg
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 cup fresh or frozen blueberries

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a muffin tin by lining it with paper liners or spraying it with cooking oil.
  3. Mix the dry ingredients in a large bowl: whole wheat flour, rolled oats, protein powder, baking powder, and baking soda.
  4. Combine the wet ingredients in another bowl: applesauce, honey or maple syrup, egg, and your chosen milk.
  5. Bring the wet ingredients into the dry and gently fold them together.
  6. Add the blueberries and fold them gently into the batter.
  7. Fill the muffin liners about 3/4 full with batter.
  8. Bake for 18-20 minutes or until a toothpick comes out clean.
  9. Cool the muffins in the pan for 5-10 minutes before transferring to a rack.

Notes

For a vegan option, replace egg with a flaxseed or chia seed egg and use almond milk.
