Deliciously fluffy muffins packed with protein and bursting with blueberries, perfect for breakfast or a snack.
Ingredients

- 1 cup whole wheat flour
- 1 cup rolled oats
- 2 scoops vanilla protein powder
- 1/2 cup unsweetened applesauce
- 1/4 cup honey or maple syrup
- 1/2 cup milk of your choice
- 1 large egg
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 cup fresh or frozen blueberries
Instructions
- Preheat your oven to 350°F (175°C).
- Prepare a muffin tin by lining it with paper liners or spraying it with cooking oil.
- Mix the dry ingredients in a large bowl: whole wheat flour, rolled oats, protein powder, baking powder, and baking soda.
- Combine the wet ingredients in another bowl: applesauce, honey or maple syrup, egg, and your chosen milk.
- Bring the wet ingredients into the dry and gently fold them together.
- Add the blueberries and fold them gently into the batter.
- Fill the muffin liners about 3/4 full with batter.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Cool the muffins in the pan for 5-10 minutes before transferring to a rack.
Notes
For a vegan option, replace egg with a flaxseed or chia seed egg and use almond milk.
