Description

A comforting and versatile dish combining ground beef and crispy potatoes, perfect for weeknight dinners and leftovers.


Ingredients

  • 1 lb (450 g) ground beef
  • 1.5 lbs (700 g) potatoes, diced
  • 1 medium onion, chopped
  • 23 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1 tsp dried thyme or 1 tbsp fresh thyme
  • 1/21 tsp crushed red pepper flakes (optional)
  • 1 cup beef broth
  • 2 tbsp tomato paste
  • 2 tbsp olive oil or butter
  • Salt and black pepper, to taste
  • Fresh parsley or chives, chopped (optional)

Instructions

  1. Prep and set the stage: Wash and dice the potatoes into roughly 1/2–3/4 inch cubes.
  2. Brown the beef: Heat a skillet over medium-high heat with 1 tbsp oil and add the ground beef.
  3. Sauté the aromatics: Push the beef to one side, add remaining oil, and toss in the onions. Sauté until soft.
  4. Crisp the potatoes: In a separate pan, add the potatoes and a drizzle of oil. Season and let them sit to develop crusts.
  5. Combine and season: Add paprika, thyme, and red pepper flakes to beef mixture, then stir in tomato paste.
  6. Deglaze and simmer: Pour in broth, scrape browned bits, and bring to a simmer.
  7. Finish with fresh herbs: Stir in parsley or chives and optional cheese, then broil if desired.
  8. Rest and serve: Let the skillet rest before serving hot.

Notes

Leftovers can be turned into breakfast by adding eggs or made into a shepherd’s pie. This dish is flexible; feel free to swap ingredients based on what you have.
