Ingredients

  • 1 pound boneless, skinless chicken breast
  • 2 medium zucchinis, sliced
  • 1 cup shredded mozzarella cheese
  • 1 cup light cream cheese, softened
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 tbsp olive oil (for greasing the baking dish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the chicken by dicing it into bite-sized pieces.
  3. Sauté the diced chicken in a skillet with olive oil, salt, and pepper for 5-7 minutes.
  4. Mix the cooked chicken with sliced zucchini, cream cheese, mozzarella, garlic powder, and Italian seasoning in a large bowl.
  5. Assemble the bake by spreading the mixture in a greased 9×13 baking dish.
  6. Bake covered with foil for 25 minutes, then uncover and bake for an additional 10-15 minutes.
  7. Let it cool for 5-10 minutes before serving.
  8. Serve with optional balsamic glaze or fresh herbs on top.
