- 1 pound boneless, skinless chicken breast
- 2 medium zucchinis, sliced
- 1 cup shredded mozzarella cheese
- 1 cup light cream cheese, softened
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- Salt and pepper to taste
- 1 tbsp olive oil (for greasing the baking dish)
Instructions
- Preheat your oven to 375°F (190°C).
- Prepare the chicken by dicing it into bite-sized pieces.
- Sauté the diced chicken in a skillet with olive oil, salt, and pepper for 5-7 minutes.
- Mix the cooked chicken with sliced zucchini, cream cheese, mozzarella, garlic powder, and Italian seasoning in a large bowl.
- Assemble the bake by spreading the mixture in a greased 9×13 baking dish.
- Bake covered with foil for 25 minutes, then uncover and bake for an additional 10-15 minutes.
- Let it cool for 5-10 minutes before serving.
- Serve with optional balsamic glaze or fresh herbs on top.
