High Protein Cucumber Salad

Description

A refreshing and nutritious salad packed with protein, perfect for warm days and garden parties.


Ingredients

  • 2 large English Cucumbers, sliced
  • 1 can Chickpeas, drained and rinsed
  • 1 small Red Onion, finely chopped
  • 1 cup Feta Cheese, crumbled
  • 3 tablespoons Olive Oil
  • 1/4 cup Lemon Juice
  • 1/4 cup Fresh Dill, chopped
  • Salt and Pepper, to taste

Instructions

  1. Wash cucumbers, slice in half lengthwise, and cut into half-moons. If desired, sprinkle with salt and let sit for 10 minutes.
  2. Rinse and drain chickpeas under cold water.
  3. Chop red onion finely.
  4. In a small bowl, whisk together olive oil, lemon juice, dill, salt, and pepper.
  5. In a large bowl, combine cucumbers, chickpeas, red onion, and feta. Drizzle dressing over and toss gently.
  6. Taste and adjust seasoning if necessary.
  7. Chill in the fridge for 30 minutes before serving.

Notes

For best results, serve chilled and consider adding grilled chicken or whole-grain pita chips.
