Ingredients
For the Salmon Bites:
1½ lbs salmon, skin removed and cut into 1-inch cubes
Salt and pepper to taste
1 tbsp olive oil
Honey Garlic Sauce:
1/4 cup honey
3 tbsp low-sodium soy sauce or coconut aminos
2 cloves garlic, minced
1 tsp fresh ginger, grated (optional)
1 tsp cornstarch + 1 tbsp water (slurry to thicken)
For the Bowl:
2 cups cooked brown rice, jasmine rice, or quinoa
1 cup shredded carrots
1 cup cucumber slices or ribbons
1 avocado, sliced
1/2 cup edamame or steamed broccoli
Sesame seeds, green onions, and lime wedges for garnish
Instructions
Sear the Salmon
Season salmon with salt and pepper. Sear in olive oil over medium-high heat for 2–3 minutes per side until browned and cooked through. Remove from pan.
Make the Sauce
In the same pan, combine honey, soy sauce, garlic, and ginger. Simmer 1–2 minutes, then add the cornstarch slurry. Stir until thick and glossy.
Glaze the Salmon
Return salmon bites to the pan and toss to coat in the sticky sauce.
