Ingredients

- 12 oz cheese tortellini
- 1 cup cherry tomatoes, halved
- 2 cups fresh spinach
- 1/2 cup red onion, finely sliced
- 1/4 cup hot honey
- 2 tbsp olive oil
- 2 tbsp fresh lemon juice
- Salt to taste
- Pepper to taste
Instructions
- Cook the tortellini according to package instructions in salted boiling water until al dente, about 3-5 minutes.
- In a small bowl, whisk together olive oil, hot honey, and lemon juice.
- Chop cherry tomatoes and slice red onion while tortellini cooks.
- After cooking, rinse tortellini under cold water, then combine with tomatoes, spinach, and onion in a large bowl.
- Pour dressing over salad and gently toss to combine.
- Season with salt and pepper, and chill for at least 20 minutes before serving.
Notes
Letting the salad sit longer enhances the flavor. Garnish with fresh herbs before serving.
