Ingredients
4 medium russet potatoes, sliced into ¼ rounds
2 tbsp olive oil
Salt, pepper, and garlic powder to taste
1 ½ cups shredded cheddar or Irish Dubliner cheese
½ cup cooked bacon, crumbled
¼ cup sliced green onions
Sour cream, for drizzling or dipping
Optional: diced tomatoes, jalapeños, chives, or ranch drizzle
Instructions
Preheat oven to 425°F (220°C). Line a baking sheet with parchment.
Toss potato slices in olive oil, salt, pepper, and garlic powder. Spread in a single layer.
Roast for 25–30 minutes, flipping halfway, until golden and crispy.
