- 8 oz Bow Tie Pasta (Farfalle)
- 1 cup Cherry Tomatoes, halved
- 1 medium Cucumber, chopped
- 1 cup Bell Peppers, diced
- 1/2 medium Red Onion, diced
- 1/4 cup Fresh Basil, chopped
- 1/3 cup Olive Oil
- 1/4 cup Red Wine Vinegar
- Salt and Pepper to taste
Instructions
- Cook the pasta: Bring a large pot of salted water to a boil. Add the bow tie pasta and cook until al dente, about 10-12 minutes. Reserve 1 cup of pasta water before draining.
- Prep your veggies: Dice the cherry tomatoes, chop the cucumber, and dice the bell peppers.
- Combine the veggies: In a large bowl, mix the cucumbers, cherry tomatoes, bell peppers, and red onion.
- Make the dressing: Whisk together olive oil, red wine vinegar, salt, and pepper in a small bowl.
- Cool the pasta: Once cooked, drain the pasta and rinse under cold water to stop the cooking process.
- Combine everything: Mix the cooled pasta with the chopped veggies and pour the dressing over the top.
- Taste and adjust: Taste and adjust seasoning if necessary.
- Chill for flavor: Cover and chill in the fridge for at least 30 minutes before serving.
