  • 1/4 cup Fresh Basil, chopped
  • 1/3 cup Olive Oil
  • 1/4 cup Red Wine Vinegar
  • Salt and Pepper to taste

Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil. Add the bow tie pasta and cook until al dente, about 10-12 minutes. Reserve 1 cup of pasta water before draining.
  2. Prep your veggies: Dice the cherry tomatoes, chop the cucumber, and dice the bell peppers.
  3. Combine the veggies: In a large bowl, mix the cucumbers, cherry tomatoes, bell peppers, and red onion.
  4. Make the dressing: Whisk together olive oil, red wine vinegar, salt, and pepper in a small bowl.
  5. Cool the pasta: Once cooked, drain the pasta and rinse under cold water to stop the cooking process.
  6. Combine everything: Mix the cooled pasta with the chopped veggies and pour the dressing over the top.
