Ingredients
2 lbs boneless skinless chicken breasts, cut into bite-sized pieces
1½ cups broccoli florets
1 small red onion, chopped
1 cup plum tomatoes
1 medium zucchini, chopped
2 tsp minced garlic
2 tbsp olive oil
1 tsp salt
½ tsp black pepper
2 tsp basil
2 tsp marjoram
2 tsp rosemary
2 tsp thyme
1 tsp paprika
2–4 cups cooked rice of choice (optional)
Instructions
Preheat oven to 400°F (200°C).
In a large bowl, toss chicken and vegetables with olive oil, garlic, and all seasonings until evenly coated.
Spread mixture on a baking sheet in a single layer.
Roast for 20–25 minutes, stirring once, until chicken is cooked through and veggies are tender and slightly caramelized.
Divide rice (if using) and roasted chicken-veggie mix into 4–6 meal prep containers.
Cool completely before sealing and refrigerating.
