Ingredients
16 oz Italian sausage (mild or spicy)
½ medium onion, finely chopped
2 celery sticks, finely chopped
2 tbsp flour
3–4 garlic cloves, minced
4 cups chicken broth
1 (28 oz) can diced tomatoes (with juice)
¼ tsp Italian seasoning
2 generous cups cheese tortellini (refrigerated)
1 cup heavy cream
2 cups baby spinach (optional)
Salt & pepper, to taste
Instructions
In a large pot, brown sausage. Drain excess fat if needed.
Add onion and celery; sauté until soft (4–5 mins). Stir in garlic and cook 1 minute.
Sprinkle in flour, stir for 1 minute.
Add broth, tomatoes, and Italian seasoning. Bring to a boil.
Stir in tortellini and simmer for 5–7 minutes until tender.
Add cream and spinach. Heat through without boiling.
Season with salt and pepper. Serve hot with crusty bread.
