Crunchy Jalapeño Corn Nuggets Recipe

Ingredients

1 cup all-purpose flour

1 tsp baking powder

1 tsp garlic powder

1/2 tsp black pepper

1/2 tsp salt

1 tsp sugar

1 large egg

1/4 cup + 2 tbsp milk

2 tbsp heavy cream

1 tbsp melted shortening

1 1/2 cups fresh sweet corn

1/4 cup diced fresh jalapeños

Canola oil for frying

Instructions

1️⃣ In one bowl, whisk flour, baking powder, salt, and sugar.
2️⃣ In another bowl, mix egg, milk, cream, and melted shortening. Combine with dry mix.
3️⃣ Fold in corn and jalapeños.
4️⃣ Chill batter in the fridge for 1 hour.
5️⃣ Heat 2 inches of oil to 360ºF.
6️⃣ Drop spoonfuls (about 2 tbsp each) into the oil and fry 2–3 minutes until golden.
7️⃣ Drain on paper towels, season with salt, and serve hot with a honey dipping sauce!
