A delicious and low-carb chicken salad inspired by the flavors of jalapeño poppers, combining creamy cheese and spicy jalapeños for a flavorful twist.

- 2 cups cooked chicken breast
- 1/2 cup cream cheese
- 1/2 cup cheddar cheese, shredded
- 1–2 jalapeños, diced
- 1/4 cup mayonnaise
- 1 tablespoon Dijon mustard
- Salt and pepper to taste
- Chopped fresh cilantro for garnish
Instructions
- Prep the chicken by cooking it in a skillet or oven, then shred it.
- Mix the cream cheese, mayo, and mustard in a bowl until smooth.
- Add the cheddar cheese and jalapeños into the mixture, folding gently.
- Toss in the shredded chicken and mix until well coated.
- Chill the salad in the refrigerator for about 30 minutes before serving.
- Serve with chopped cilantro on top, possibly on lettuce leaves or with crackers.
Notes
This salad can last up to 3-4 days in the fridge. The flavors are best fresh.
