A creamy keto-friendly casserole combining tender chicken, vibrant broccoli, and rich Alfredo sauce for a comforting dish.


Ingredients

  • 2 cups cooked chicken, shredded or diced
  • 4 cups broccoli florets
  • 2 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • Optional: 1/2 teaspoon red pepper flakes for heat

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prep the broccoli by steaming or blanching for about 3-4 minutes until bright green but still crisp.
  3. Make the creamy Alfredo sauce by adding olive oil to a medium saucepan and whisking in heavy cream gradually.
  4. Sprinkle in garlic powder, onion powder, salt, and pepper. Whisk until slightly thickened, about 5 minutes.
  5. Stir in grated Parmesan until smooth and creamy.
  6. Combine cooked chicken, steamed broccoli, and Alfredo sauce in a large bowl. Mix well.
  7. Transfer to a greased 9×13 inch baking dish and spread evenly.
  8. Top with additional Parmesan cheese.
  9. Bake for 25-30 minutes until bubbly and golden. Optionally broil for a couple of minutes for extra color.
  10. Let it cool slightly for 5-10 minutes before serving.

Notes

Consider serving with a side salad for a complete meal and a sprinkle of red pepper flakes for added heat.
