Ingredients
- Boneless, Skinless Chicken Breasts (about 2 pounds)
- Mushrooms (about 12 ounces, portobello or cremini)
- Garlic (4 to 6 cloves)
- Cream Cheese (8 oz)
- Shredded Cheese (1 to 2 cups)
- Chicken Broth (1 cup)
- Olive Oil (2 tablespoons)
- Dried Italian Herbs (1 teaspoon)
- Salt and Pepper (to taste)
Instructions
- Preheat the Oven: Set your oven to 375°F (190°C).
- Sauté the Chicken: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Season your chicken breasts with salt and pepper. Sear them for about 6-7 minutes on each side until golden and cooked through, then remove and set aside.
- Cook the Mushrooms: In the same skillet, add the remaining tablespoon of olive oil. Sauté the chopped mushrooms and minced garlic until golden brown, about 5–7 minutes.
- Prepare the Creamy Mixture: In a large bowl, combine the sautéed mushrooms, garlic, softened cream cheese, chicken broth, and dried herbs. Mix until well combined.
- Shred the Chicken: Once cooled, shred the chicken with two forks or chop into bite-sized pieces.
- Combine Everything: Fold the shredded chicken into the creamy mushroom mixture until well-coated. Pour into a greased 9×13-inch baking dish.
- Add Cheese: Top with shredded cheese, spreading it evenly.
- Bake: Bake for 20 to 25 minutes, or until the cheese is bubbly and golden.
- Let It Rest: Allow the casserole to cool for about 5-10 minutes before serving.
