Ingredients

  • 3 tablespoons powdered erythritol (or other keto sweeteners)
  • ½ teaspoon vanilla extract
  • 2 tablespoons almond flour (or coconut flour)
  • 1 tablespoon unsalted butter (or coconut oil)
  • Pinch of salt

Instructions

  1. Prepare your mug by greasing it with a little butter.
  2. Mix the base in a bowl with almond flour, melted butter, and a pinch of salt.
  3. Press the almond flour mixture into your greased mug to form the crust.
  4. Cream the cream cheese in another bowl until smooth.
  5. Add the egg, erythritol, and vanilla extract to the cream cheese and mix until well combined.
  6. Pour the cream cheese filling over the crust in the mug.
  7. Microwave the mug on high for 1 minute, checking at 45 seconds.
  8. Chill the cheesecake for about 30 minutes before serving.
