Korean BBQ Meatballs with Spicy Mayo Dip

Ingredients

For the Meatballs:

1 lb ground beef or pork

1/2 cup panko breadcrumbs

1 egg (lightly beaten)

2 green onions (finely chopped)

2 garlic cloves (minced)

1 tsp grated ginger

2 tbsp soy sauce

1 tbsp sesame oil

1 tbsp brown sugar

1/2 tsp black pepper

For the BBQ Glaze:

1/4 cup soy sauce

2 tbsp honey or brown sugar

1 tbsp rice vinegar

1 tsp sesame oil

1 garlic clove (minced)

1 tsp grated ginger

Optional: 1 tsp cornstarch + 2 tsp water

For the Spicy Mayo Dip:

1/4 cup mayonnaise

1 tbsp Sriracha or gochujang

1 tsp lime juice or rice vinegar

1/2 tsp honey (optional)

For Garnish:

Sesame seeds

Chopped green onions


Instructions

1️⃣ Make the meatballs: Mix all ingredients and roll into 1½-inch balls.
2️⃣ Bake: Place on a lined sheet and bake at 400°F for 15–18 minutes.
3️⃣ Make the glaze: Simmer all glaze ingredients. Thicken with cornstarch if desired.
4️⃣ Glaze the meatballs: Toss baked meatballs in warm glaze.
5️⃣ Mix the dip: Whisk together spicy mayo ingredients.
6️⃣ Serve: Garnish meatballs with sesame seeds and green onion. Serve with the spicy dip.
