14 oz (400 g) thinly sliced beef (sirloin, ribeye, or any tender cut)
1 scallion, green and white parts separated and thinly sliced
½ large onion, thinly sliced
½ medium carrot, peeled and sliced diagonally
1 tbsp cooking oil (peanut or vegetable recommended)
½ tbsp sesame seeds
Marinade
3 tbsp soy sauce (e.g., Kikkoman)
1½ tbsp brown sugar
1 tbsp mirin
½ tbsp sesame oil
2 tbsp grated onion
2 cloves garlic, minced
3 tbsp grated red apple (or nashi pear)
½ tsp minced ginger
Black pepper, to taste
Instructions
Make the marinade: In a bowl, combine all marinade ingredients and mix well.
Marinate the beef: Add thinly sliced beef, grated onion, garlic, apple, and ginger to the marinade. Toss to coat and let sit for 30 minutes (or up to overnight in the fridge).
Stir-fry veggies: Heat oil in a skillet over medium-high. Add carrots and white scallion parts. Cook for 1–2 mins.
Cook the beef: Add marinated beef and sliced onion to the pan. Stir-fry for 3–4 minutes until beef is browned and cooked through.
Finish it off: Sprinkle sesame seeds and green scallions over the top. Serve over steamed rice or in lettuce wraps.
