Description

A delightful sandwich filled with fluffy scrambled eggs, veggies, and sweet sauces, inspired by traditional Korean street food.


Ingredients

  • 2 slices of bread
  • 2 eggs
  • 1/2 cup chopped vegetables (cabbage, carrots, green onions)
  • 1 tbsp butter
  • 1 tbsp ketchup
  • Ground black pepper (to taste)
  • 1 tbsp mayonnaise
  • 1 slice of cheese (optional)

Instructions

  1. Prep your ingredients by chopping up your veggies into small pieces.
  2. Beat the eggs until they are light and frothy.
  3. Sauté the veggies in a non-stick frying pan with butter for about 2-3 minutes.
  4. Pour the beaten eggs over the sautéed veggies and scramble until just set.
  5. Toast your bread in a separate pan until golden. Spread mayo on one slice and ketchup on the other.
  6. Fill one slice with the egg and vegetable mixture, adding cheese if desired.
  7. Place the second slice on top mayo side down.
  8. Press down the sandwich in the pan for another minute until crispy and golden.
  9. Remove from the pan, let rest for a minute, slice in half, and enjoy!
