A delightful sandwich filled with fluffy scrambled eggs, veggies, and sweet sauces, inspired by traditional Korean street food.
Ingredients

- 2 slices of bread
- 2 eggs
- 1/2 cup chopped vegetables (cabbage, carrots, green onions)
- 1 tbsp butter
- 1 tbsp ketchup
- Ground black pepper (to taste)
- 1 tbsp mayonnaise
- 1 slice of cheese (optional)
Instructions
- Prep your ingredients by chopping up your veggies into small pieces.
- Beat the eggs until they are light and frothy.
- Sauté the veggies in a non-stick frying pan with butter for about 2-3 minutes.
- Pour the beaten eggs over the sautéed veggies and scramble until just set.
- Toast your bread in a separate pan until golden. Spread mayo on one slice and ketchup on the other.
- Fill one slice with the egg and vegetable mixture, adding cheese if desired.
- Place the second slice on top mayo side down.
- Press down the sandwich in the pan for another minute until crispy and golden.
- Remove from the pan, let rest for a minute, slice in half, and enjoy!
