Ingredients

- 1/4 cup Fresh Lemon Juice
- 1/2 cup Extra Virgin Olive Oil
- 1/4 cup Tahini Paste

Instructions
- Start with the garlic: Mince the garlic finely using a mortar and pestle or cutting board.
- Juicing the lemons: Juice the lemons and catch any seeds; you’ll need about 1/4 cup of juice.
- Combine base ingredients: In a bowl or jar, add minced garlic, lemon juice, and tahini paste; whisk until smooth.
- Whisk in the olive oil: Slowly pour in olive oil while whisking to create a creamy emulsion.
- Season to perfection: Add salt and pepper to taste, adjusting to preference.
- Fresh herbs optional: Add chopped herbs for a refreshing touch.
- Serve it up: Give it a stir and enjoy over salads, grilled veggies, or as a marinade.
Notes
This dressing can last up to a week in an airtight container in the fridge. Adjust lemon juice to taste if preferred milder.
