1 ½ cups all-purpose flour
½ tsp baking soda
¼ tsp salt
½ cup unsalted butter, softened
¾ cup sugar
1 egg
Zest of 1 lemon
1 tbsp fresh lemon juice
1 tbsp finely chopped fresh basil
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a bowl, whisk flour, baking soda, and salt.
In another bowl, cream butter and sugar until fluffy. Beat in egg, lemon zest, juice, and basil.
Gradually mix in the dry ingredients.
Scoop dough into balls and place on baking sheet. Flatten slightly.
Bake 10–12 minutes until edges are lightly golden. Cool before serving.
