1 tbsp olive oil
1 lb chicken breast or thighs, chopped
1 package (16 oz) potato gnocchi
2 garlic cloves, minced
1 cup chicken broth
1/2 cup milk or cream
Juice and zest of 1 lemon
1 cup spinach or arugula
1/4 cup grated Parmesan cheese
Salt and pepper to taste
In a large skillet, heat olive oil and cook chicken until golden and cooked through. Remove and set aside.
In the same pan, add garlic and gnocchi. Cook for 2–3 minutes.
