• 1 bunch kale, ribs removed, chopped
• 2 tbsp olive oil
• Juice of 1 lemon
• 1 garlic clove, minced
• ⅓ cup Caesar dressing (homemade or store-bought)
• ¼ cup grated Parmesan cheese
• Salt & black pepper to taste
• 1 cup croutons
• Optional: extra lemon zest or anchovy paste for a punch
Place chopped kale in a large bowl. Add olive oil, lemon juice, and a pinch of salt.
Massage kale with clean hands for 1–2 minutes until tender.
Add garlic, Caesar dressing, and Parmesan. Toss to coat.
Add croutons and season with black pepper.
Serve immediately with extra cheese or a lemon wedge, if desired.
