6 cups curly kale, de-stemmed and chopped
1/4 cup fresh lemon juice
1/4 cup olive oil
2 cloves garlic, minced
1/3 cup grated Parmesan cheese
Salt and black pepper to taste
Optional: toasted breadcrumbs or sliced almonds for crunch
Instructions
In a small bowl, whisk together lemon juice, olive oil, and garlic.
Pour dressing over kale and massage with clean hands for 2–3 minutes to tenderize.
Add Parmesan, season with salt and pepper, and toss well.
Top with optional crunchy toppings and serve fresh or chilled.
