Description

Ingredients

  • 1 cup plain yogurt
  • 1 cup granulated sugar
  • 3 large eggs
  • 1/2 cup vegetable oil
  • Zest of 2 lemons
  • 1/2 cup freshly squeezed lemon juice
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease and flour a 9-inch round cake pan.
  3. In a large mixing bowl, combine yogurt, sugar, and eggs, whisking until smooth.
  4. Add the vegetable oil, lemon zest, and lemon juice to the mix, whisk thoroughly.
  5. In a separate bowl, mix the flour, baking powder, baking soda, and salt.
  6. Gently fold the dry ingredients into the wet mixture until no dry flour remains.
  7. Pour the batter into the prepared cake pan and spread evenly.
  8. Bake for 30-35 minutes or until a toothpick inserted comes out clean.
  9. Let the cake cool for 10 minutes in the pan before transferring to a wire rack.
  10. Optionally, mix powdered sugar with lemon juice to create a glaze once the cake is cooled.

Notes

For a richer lemon flavor, add a teaspoon of lemon extract to the batter or glaze.
