Description

A comforting casserole combining the classic flavors of a cheeseburger with low-carb ingredients.


Ingredients

  • 1 lb ground beef
  • 6 slices of bacon
  • 1 cup shredded cheddar cheese
  • ½ cup cream cheese
  • 4 large eggs
  • ½ cup diced onion
  • 1 cup diced tomatoes
  • ¼ cup dill pickles (diced)
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the bacon until crispy, then set aside to drain.
  3. Brown the ground beef in the bacon fat, seasoning with salt, pepper, garlic powder, onion powder, and paprika.
  4. Mix cream cheese and eggs in a bowl until well blended.
  5. Combine the cooked beef, chopped bacon, cheese, tomatoes, onion, and pickles with the egg mixture.
  6. Transfer the mixture to a greased 9×13-inch baking dish.
  7. Bake for 30-35 minutes until set and slightly golden.
  8. Let it rest for 10 minutes before serving.
