- 3/4 cup of granulated sugar
- 1 cup of heavy whipping cream
- 3 large eggs
- 1 package of gelatin (about 2 1/4 teaspoons) (or agar-agar for a veggie option)
- 1 tablespoon of lemon juice
- 1/2 teaspoon of vanilla extract
- A pinch of salt
Instructions
- Prepare the Mango Puree: Peel and chop mangoes, then puree until smooth. You need about two cups of pulp.
- Make the Mousse Base: Whip heavy cream until soft peaks form, about 3-4 minutes.
- Whisk The Eggs and Sugar: In a heat-proof bowl, whisk eggs and sugar, place over simmering water, stirring until warm (about 5 minutes).
- Bloom the Gelatin: Sprinkle gelatin over 1/4 cup of cold water, let sit 5 minutes, then gently heat until dissolved.
- Combine Everything: Fold mango puree into egg-sugar-gelatin mix, then gently fold in the whipped cream.
- Chill the Mousse: Pour into a springform pan or serving cups and refrigerate for at least 4 hours to set.
- Prepare the Cake Base (Optional): Bake a preferred sponge cake, slice, and layer under the mousse if desired.
- Serve and Enjoy: Release the pan or serve directly from cups. Garnish with fresh mango or whipped cream.
