  • 1/2 teaspoon of vanilla extract
  • A pinch of salt

Instructions

  1. Prepare the Mango Puree: Peel and chop mangoes, then puree until smooth. You need about two cups of pulp.
  2. Make the Mousse Base: Whip heavy cream until soft peaks form, about 3-4 minutes.
  3. Whisk The Eggs and Sugar: In a heat-proof bowl, whisk eggs and sugar, place over simmering water, stirring until warm (about 5 minutes).
  4. Bloom the Gelatin: Sprinkle gelatin over 1/4 cup of cold water, let sit 5 minutes, then gently heat until dissolved.
  5. Combine Everything: Fold mango puree into egg-sugar-gelatin mix, then gently fold in the whipped cream.
  6. Chill the Mousse: Pour into a springform pan or serving cups and refrigerate for at least 4 hours to set.
  7. Prepare the Cake Base (Optional): Bake a preferred sponge cake, slice, and layer under the mousse if desired.
  8. Serve and Enjoy: Release the pan or serve directly from cups. Garnish with fresh mango or whipped cream.
