Description

A vibrant, refreshing mango slaw that combines crisp veggies with the sweetness of mango and a tangy dressing.


Ingredients

  • 4 cups green cabbage, thinly sliced
  • 1 cup carrots, shredded
  • 1 large ripe mango, diced
  • 1 red bell pepper, chopped
  • 1/2 cup green onions, sliced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup lime juice
  • 2 tablespoons honey
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare the veggies: Slice cabbage into thin strips and shred carrots.
  2. Dice the mango into cubes.
  3. Chop the red bell pepper and slice green onions.
  4. Make the dressing by whisking lime juice, honey, and olive oil in a small bowl.
  5. Combine all veggies in a large bowl and pour the dressing over them.
  6. Chill in the fridge for at least 30 minutes before serving.

Notes

For added flavor, chill the slaw before serving to let the flavors meld together.
