Ingredients

- 4 cups green cabbage, thinly sliced
- 1 cup carrots, shredded
- 1 large ripe mango, diced
- 1 red bell pepper, chopped
- 1/2 cup green onions, sliced
- 1/4 cup fresh cilantro, chopped
- 1/4 cup lime juice
- 2 tablespoons honey
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Prepare the veggies: Slice cabbage into thin strips and shred carrots.
- Dice the mango into cubes.
- Chop the red bell pepper and slice green onions.
- Make the dressing by whisking lime juice, honey, and olive oil in a small bowl.
- Combine all veggies in a large bowl and pour the dressing over them.
- Chill in the fridge for at least 30 minutes before serving.
Notes
For added flavor, chill the slaw before serving to let the flavors meld together.
