Description
A flavorful Indian fusion dish featuring crispy dosa filled with spiced potatoes, all sandwiched between slices of bread.
Ingredients
- Dosa Batter
- Potatoes (3 medium-sized)
- Onion (1 medium, finely chopped)
- Green chilies (2, finely chopped)
- Cumin seeds (1 teaspoon)
- Mustard seeds (1 teaspoon)
- Turmeric powder (1/4 teaspoon)
- Fresh coriander (a small bunch, chopped)
- Bread (4 slices)
- Butter or ghee (for toasting)
Instructions
- Prepare the Dosa Batter: Soak equal parts of rice and urad dal in water overnight; drain, blend with a little water until smooth, and let it ferment for 8–12 hours. If using pre-made batter, skip this step.
- Cook the Spiced Potato Filling: Heat a pan over medium heat and add oil. Add cumin and mustard seeds; let them sizzle for about 30 seconds. Add chopped onions and sauté until translucent. Stir in green chilies and turmeric powder, then mix in the mashed potatoes, salt, and chopped coriander. Cook for 3–5 minutes and set aside.
- Make the Dosa: In a clean, hot pan, ladle some dosa batter and spread it circularly. Drizzle oil or ghee around the edges and cook for 2-3 minutes until golden brown.
- Assemble the Sandwich: Place a generous scoop of potato filling on one half of the dosa, fold the other half over, and toast in the pan with butter or ghee for 1-2 minutes.
- Final Touches: Slice the sandwich for easy serving and garnish with fresh coriander.

Serve with coconut chutney or tomato chutney for an elevated experience.
