Ingredients
2 medium boneless, skinless chicken breasts, cut into ½-inch pieces
1 cup broccoli florets (fresh or frozen)
1 small red onion, chopped
1 cup grape or plum tomatoes
1 medium zucchini, chopped
2 cloves garlic, minced
1 tbsp Italian seasoning
1 tsp salt
½ tsp black pepper (optional)
½ tsp red pepper flakes (optional)
½ tsp paprika
2 tbsp olive oil
2–4 cups cooked rice of choice (optional)

Instructions
Preheat oven to 425°F (220°C). Line a sheet pan with parchment paper.
In a large bowl, toss chicken and veggies with olive oil, garlic, and seasonings until evenly coated.
Spread mixture in a single layer on the sheet pan.
Bake for 20–25 minutes, stirring once halfway, until chicken is cooked through and vegetables are tender.
Divide chicken and veggies into 4 containers with optional rice.
