Ingredients
1 lb boneless, skinless chicken breast or thighs
1 tbsp olive oil
2 tsp salt (divided)
2 tsp Italian seasoning (divided)
2 tsp garlic powder (divided)
1 medium onion, chopped
2 garlic cloves, minced
1 bunch kale, chopped
½ cup vegetable broth
¼ cup sun-dried tomatoes in olive oil
2½ cups cooked jasmine or basmati rice
Instructions
Season chicken with 1 tsp each of salt, Italian seasoning, and garlic powder.
Heat olive oil in a large skillet over medium heat. Sear chicken on both sides until browned and cooked through. Remove and set aside.
In the same skillet, sauté onion and garlic until soft.
Add kale and vegetable broth. Cook until wilted.
Stir in rice, sun-dried tomatoes, and remaining seasoning.
Return chicken to the pan. Heat everything together for 2–3 minutes.
Serve warm with a squeeze of lemon, if desired.
