Ingredients

  • 1 can Chickpeas (Canned or Cooked)
  • 1 Cucumber (Diced)
  • 1 Red Bell Pepper (Diced)
  • 1 Yellow Bell Pepper (Diced)
  • 1 Red Onion (Finely Chopped)
  • 1 cup Cherry Tomatoes (Halved)
  • 1/2 cup Feta Cheese (Crumbled)
  • 1/4 cup Fresh Parsley (Chopped)
  • 1/4 cup Olive Oil (Extra Virgin)
  • 3 tbsp Lemon Juice (Freshly Squeezed)
  • Salt and Pepper (to taste)

Instructions

  1. Prepare all your ingredients first. Dice the cucumbers, chop the bell peppers, and slice the cherry tomatoes.
  2. Drain and rinse canned chickpeas in cold water.
  3. Combine chickpeas, diced cucumbers, bell peppers, cherry tomatoes, and red onion in a large mixing bowl.
  4. Add the crumbled feta cheese into the mix and gently toss.
  5. Whisk together olive oil, lemon juice, salt, and pepper in a separate bowl.
  6. Pour the dressing over the salad and gently toss everything together.
  7. Taste and adjust seasoning as needed.
  8. Chill in the fridge for at least 30 minutes before serving.

Notes

For added flavor, let the salad chill for a while before serving to allow flavors to meld together.
