- 1 can Chickpeas (Canned or Cooked)
- 1 Cucumber (Diced)
- 1 Red Bell Pepper (Diced)
- 1 Yellow Bell Pepper (Diced)
- 1 Red Onion (Finely Chopped)
- 1 cup Cherry Tomatoes (Halved)
- 1/2 cup Feta Cheese (Crumbled)
- 1/4 cup Fresh Parsley (Chopped)
- 1/4 cup Olive Oil (Extra Virgin)
- 3 tbsp Lemon Juice (Freshly Squeezed)
- Salt and Pepper (to taste)
Instructions
- Prepare all your ingredients first. Dice the cucumbers, chop the bell peppers, and slice the cherry tomatoes.
- Drain and rinse canned chickpeas in cold water.
- Combine chickpeas, diced cucumbers, bell peppers, cherry tomatoes, and red onion in a large mixing bowl.
- Add the crumbled feta cheese into the mix and gently toss.
- Whisk together olive oil, lemon juice, salt, and pepper in a separate bowl.
- Pour the dressing over the salad and gently toss everything together.
- Taste and adjust seasoning as needed.
- Chill in the fridge for at least 30 minutes before serving.
Notes
For added flavor, let the salad chill for a while before serving to allow flavors to meld together.
