- 2 pounds Potatoes (waxy like Yukon Gold or red)
- 1 cup Cherry Tomatoes, halved
- 1 medium Cucumber, diced

- 1/2 cup Kalamata Olives, pitted and sliced
- 1/2 cup Feta Cheese, crumbled
- 1/2 cup Fresh Basil, chopped

Instructions
- Prep the Potatoes: Scrub, cut into 1-inch cubes, and place in a pot with cold water and salt.
- Boil and Drain: Boil for 10-15 minutes until tender. Drain and cool slightly.
- Toss the Veggies: In a bowl, mix cherry tomatoes, cucumber, red onion, olives, and feta.
- Make the Vinaigrette: Whisk together olive oil, red wine vinegar, salt, and pepper in a small bowl.
- Combine Everything: Add cooled potatoes to the veggies and drizzle with vinaigrette. Gently fold together.
- Let It Chill: Cover and refrigerate for at least 30 minutes.
