Ingredients

  • 1 cup Cherry Tomatoes, halved

  • 1/2 cup Kalamata Olives, pitted and sliced
  • 1/2 cup Feta Cheese, crumbled
  • 1/2 cup Fresh Basil, chopped

  • Salt and Pepper to taste

Instructions

  1. Prep the Potatoes: Scrub, cut into 1-inch cubes, and place in a pot with cold water and salt.
  2. Boil and Drain: Boil for 10-15 minutes until tender. Drain and cool slightly.
  3. Toss the Veggies: In a bowl, mix cherry tomatoes, cucumber, red onion, olives, and feta.
  4. Make the Vinaigrette: Whisk together olive oil, red wine vinegar, salt, and pepper in a small bowl.
  5. Combine Everything: Add cooled potatoes to the veggies and drizzle with vinaigrette. Gently fold together.
  6. Let It Chill: Cover and refrigerate for at least 30 minutes.
  7. Serve and Enjoy: Gently stir, adjust seasoning, and garnish with fresh basil before serving.
