- 2 lbs Baby red or Yukon Gold potatoes
- 1 cup Cherry tomatoes, halved
- 1 large Cucumber, chopped
- 1/2 small Red onion, chopped
- 1 cup Feta cheese, crumbled
- 1/4 cup Fresh parsley, chopped
- 1/3 cup Olive oil
- Juice of 1 lemon
- Salt and pepper, to taste
Instructions
- Boil the potatoes: Wash and cut potatoes into bite-sized pieces. Boil in salted water for 15-20 minutes until fork-tender.
- Prep the vegetables: Chop cucumbers, cherry tomatoes, red onions, and parsley.
- Make the dressing: Whisk together olive oil, lemon juice, salt, and pepper in a small bowl.
- Combine the ingredients: Drain potatoes and let cool slightly, then mix with chopped veggies, feta, and parsley in a large bowl.
- Dress the salad: Drizzle with dressing and gently toss to coat without breaking the potatoes.
- Chill and serve: Let it sit for 30 minutes, then serve chilled or at room temperature.
Notes
This salad can be made ahead of time for better flavor melding. Store leftovers in an airtight container.
