Description

Ingredients

  • 2 lbs Baby red or Yukon Gold potatoes
  • 1 cup Cherry tomatoes, halved
  • 1 large Cucumber, chopped
  • 1/2 small Red onion, chopped
  • 1 cup Feta cheese, crumbled
  • 1/4 cup Fresh parsley, chopped
  • 1/3 cup Olive oil
  • Juice of 1 lemon
  • Salt and pepper, to taste

Instructions

  1. Boil the potatoes: Wash and cut potatoes into bite-sized pieces. Boil in salted water for 15-20 minutes until fork-tender.
  2. Prep the vegetables: Chop cucumbers, cherry tomatoes, red onions, and parsley.
  3. Make the dressing: Whisk together olive oil, lemon juice, salt, and pepper in a small bowl.
  4. Combine the ingredients: Drain potatoes and let cool slightly, then mix with chopped veggies, feta, and parsley in a large bowl.
  5. Dress the salad: Drizzle with dressing and gently toss to coat without breaking the potatoes.
  6. Chill and serve: Let it sit for 30 minutes, then serve chilled or at room temperature.

Notes
