Ingredients
- Tortillas (6-8)
- Fresh Spinach (2 cups, chopped)
- Feta Cheese (1 cup, crumbled)
- Mozzarella Cheese (1 cup, shredded)
- Red Onion (1 small, thinly sliced)
- Olive Oil (1 tablespoon)
- Garlic (2 cloves, minced)
- Salt & Pepper (to taste)
- Optional Seasonings (like oregano or crushed red pepper flakes)
Instructions
- Sauté the sliced red onions in olive oil until translucent.
- Add chopped spinach and minced garlic; cook until spinach wilts.
- Season the mixture with salt, pepper, and optional herbs; let it cool slightly.
- Assemble the quesadillas with layers of mozzarella, spinach mixture, feta, and more mozzarella.
- Cook each quesadilla in a skillet until golden brown on both sides and the cheese melts.
- Slice and serve with hummus or tzatziki for dipping.
