- Soft tortillas (flour or whole wheat)
- 2 cups fresh spinach, chopped
- 1/2 cup feta cheese, crumbled
- 1 cup mozzarella cheese, shredded
- 1 red onion, thinly sliced
- 2 tablespoons olive oil
- Salt and pepper to taste
- Cooking spray (optional)
Instructions
- Wash and chop the spinach. Dice the red onion.
- In a bowl, mix crumbled feta and shredded mozzarella cheese.
- Heat a non-stick skillet over medium heat with a drizzle of olive oil.
- On one half of a tortilla, layer spinach, red onion, and cheese mixture.
- Fold the tortilla and cook for 3-4 minutes until golden brown.
- Flip and cook for another 3-4 minutes until the cheese melts and the other side is golden brown.
- Remove from the skillet, keep warm, and repeat with remaining tortillas.
- Slice into wedges and serve warm with dips like tzatziki or salsa.
