Description

Crispy tortillas filled with a melty mix of spinach, feta, mozzarella, and zesty red onions, perfect for a quick dinner or snack.


Ingredients

  • Soft tortillas (flour or whole wheat)
  • 2 cups fresh spinach, chopped
  • 1/2 cup feta cheese, crumbled
  • 1 cup mozzarella cheese, shredded
  • 1 red onion, thinly sliced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Cooking spray (optional)

Instructions

  1. Wash and chop the spinach. Dice the red onion.
  2. In a bowl, mix crumbled feta and shredded mozzarella cheese.
  3. Heat a non-stick skillet over medium heat with a drizzle of olive oil.
  4. On one half of a tortilla, layer spinach, red onion, and cheese mixture.
  5. Fold the tortilla and cook for 3-4 minutes until golden brown.
  6. Flip and cook for another 3-4 minutes until the cheese melts and the other side is golden brown.
  7. Remove from the skillet, keep warm, and repeat with remaining tortillas.
  8. Slice into wedges and serve warm with dips like tzatziki or salsa.

Notes
