Ingredients

- 4 large Egg Whites
- 1 cup Granulated Sugar
- 1/4 tsp Cream of Tartar
- 1 tsp Vanilla Extract
- 1/2 cup Citrus Juice (lemon, lime, or orange)
- 1 tbsp Zest of Citrus
- 2/3 cup Granulated Sugar (for curd)
- 3 large Egg Yolks
- 1/4 cup Unsalted Butter
Instructions
- Preheat your oven to 200°F (93°C) and line two baking sheets with parchment paper.
- Whip the egg whites in a clean bowl until frothy, then add cream of tartar.
- Add sugar gradually until you reach stiff, glossy peaks.
- Fold in the vanilla extract gently.
- Pipe the meringue onto baking sheets in desired shapes.
- Bake for 1.5 to 2 hours until dry. Cool in the oven.
- Combine citrus juice, zest, sugar, and egg yolks in a pan over low heat until thick.
- Stir in butter until melted.
- Fill cooled meringues with citrus curd.
Notes
For a sophisticated touch, garnish with fresh fruits and a dusting of powdered sugar.
