1 1/2 cups orzo pasta
2 cups rotisserie chicken, shredded
1 cup fresh blueberries
1/2 cup celery, finely chopped
1/4 cup red onion, minced (optional)
1/3 cup mayonnaise or Greek yogurt
2 tbsp lemon juice
1 tbsp honey
1 tsp poppyseeds
1 tsp Dijon mustard
Salt and pepper to taste
Cook orzo according to package instructions, drain, and let cool.
In a large bowl, whisk together mayo (or yogurt), lemon juice, honey, mustard, poppyseeds, salt, and pepper.
Add the cooled orzo, chicken, blueberries, celery, and onion to the bowl.
Toss gently until everything is evenly coated.
Chill for at least 30 minutes for best flavor.
