Ingredients
1¾ cups old-fashioned oats
¾ cup creamy peanut butter
⅓ cup honey
¼ cup mini M&Ms
¼ cup mini chocolate chips
1 teaspoon vanilla extract (optional)
Pinch of salt (optional, especially if using unsalted peanut butter)
Instructions
In a large bowl, stir together peanut butter, honey, and vanilla extract until smooth.
Add oats, mini M&Ms, mini chocolate chips, and a pinch of salt. Mix until fully combined.
Scoop and roll mixture into 1-inch balls using a spoon or small scoop.
Place on a parchment-lined tray and chill for 30 minutes until firm.
Store in an airtight container in the fridge for up to a week.
