No-Bake Peanut Butter Energy Bites

Description

Wholesome and delicious no-bake energy bites packed with protein, fiber, and healthy fats to keep you energized throughout the day.


Ingredients

Scale
  • 1 cup rolled oats
  • ½ cup peanut butter
  • ¼ cup honey or maple syrup
  • ¼ cup mini chocolate chips
  • ¼ cup ground flaxseed
  • 1 tsp vanilla extract
  • A pinch of salt

Instructions

  1. In a large mixing bowl, combine the rolled oats, ground flaxseed, and a pinch of salt. Stir well.
  2. Pour in the peanut butter and honey (or your chosen sweetener). Mix using a spatula or your hands.
  3. Toss in mini chocolate chips and vanilla extract. Mix until well combined.
  4. Grab a tablespoon or small cookie scoop and form the mixture into bite-sized balls.
  5. Place formed energy bites on a parchment-lined baking sheet and chill in the fridge for at least 30 minutes.
  6. Enjoy your energy bites stored in an airtight container in the fridge for up to a week.
