Ingredients

- 1 cup rolled oats
- ½ cup peanut butter
- ¼ cup honey or maple syrup
- ¼ cup mini chocolate chips
- ¼ cup ground flaxseed
- 1 tsp vanilla extract
- A pinch of salt
Instructions
- In a large mixing bowl, combine the rolled oats, ground flaxseed, and a pinch of salt. Stir well.
- Pour in the peanut butter and honey (or your chosen sweetener). Mix using a spatula or your hands.
- Toss in mini chocolate chips and vanilla extract. Mix until well combined.
- Grab a tablespoon or small cookie scoop and form the mixture into bite-sized balls.
- Place formed energy bites on a parchment-lined baking sheet and chill in the fridge for at least 30 minutes.
- Enjoy your energy bites stored in an airtight container in the fridge for up to a week.
