One Pan Chicken & Pineapple Tacos

Description

A tropical flavor explosion with juicy chicken and caramelized pineapple, perfect for busy weeknights.


Ingredients

  • 1 lb Chicken Breast (boneless, skinless)
  • 1 cup Pineapple (diced)
  • 2 tablespoons Olive Oil
  • 1 cup Bell Peppers (sliced)
  • ½ cup Red Onion (sliced)
  • 3 cloves Garlic (minced)
  • 1 tablespoon Taco Seasoning
  • 1 Lime (juiced)
  • 8 small Tortillas
  • Cilantro (for garnish)

Instructions

  1. Chop chicken into bite-sized pieces, dice pineapple, slice bell peppers and red onion, and mince garlic.
  2. In a large skillet over medium-high heat, add olive oil and let it heat up.
  3. Add diced chicken to the pan and sprinkle half of the taco seasoning. Cook for about 5-7 minutes until golden brown.
  4. Toss in bell peppers, red onions, remaining taco seasoning, and minced garlic. Sauté for 3-4 minutes.
  5. Add diced pineapple and squeeze lime juice over the mixture. Cook for an additional 2-3 minutes.
  6. Warm tortillas in a dry skillet for about 30 seconds on each side.
  7. Assemble tacos by laying out tortillas and spooning the chicken and pineapple mixture on top. Garnish with cilantro.
  8. Serve and enjoy!

Notes

For an extra kick, add jalapeños to the filling or use lettuce wraps for a low-carb option.
