- 1 lb Chicken Breast (boneless, skinless)
- 1 cup Pineapple (diced)
- 2 tablespoons Olive Oil
- 1 cup Bell Peppers (sliced)
- ½ cup Red Onion (sliced)
- 3 cloves Garlic (minced)
- 1 tablespoon Taco Seasoning
- 1 Lime (juiced)
- 8 small Tortillas
- Cilantro (for garnish)
Instructions
- Chop chicken into bite-sized pieces, dice pineapple, slice bell peppers and red onion, and mince garlic.
- In a large skillet over medium-high heat, add olive oil and let it heat up.
- Add diced chicken to the pan and sprinkle half of the taco seasoning. Cook for about 5-7 minutes until golden brown.
- Toss in bell peppers, red onions, remaining taco seasoning, and minced garlic. Sauté for 3-4 minutes.
- Add diced pineapple and squeeze lime juice over the mixture. Cook for an additional 2-3 minutes.
- Warm tortillas in a dry skillet for about 30 seconds on each side.
- Assemble tacos by laying out tortillas and spooning the chicken and pineapple mixture on top. Garnish with cilantro.
- Serve and enjoy!
Notes
For an extra kick, add jalapeños to the filling or use lettuce wraps for a low-carb option.
