Description

This meal is a tribute to those evenings when you crave something nourishing but don’t want a pile of dishes. One pan, a handful of fresh ingredients, and in less than 30 minutes, dinner is served. The salmon is flaky and flavorful, the veggies tender-crisp, and the lemon and herbs add that touch of brightness that makes everything pop. It’s a simple joy—healthy, vibrant, and made for sharing around the table.


Ingredients

• 2 salmon fillets
• 1 small zucchini, sliced
• 1 cup cherry tomatoes
• 1 cup asparagus, trimmed
• 2 tbsp olive oil
• Juice of 1 lemon
• Lemon slices, for garnish
• 1 tsp garlic powder
• Salt and pepper, to taste
• Fresh dill or parsley, chopped


Instructions

Preheat oven to 400°F (200°C).

Place salmon and veggies on a lined baking sheet.

Drizzle with olive oil and lemon juice.

Sprinkle with garlic powder, salt, and pepper.

Top salmon with lemon slices.

Roast for 15–18 minutes, or until salmon flakes easily.

Garnish with fresh herbs and serve.
