Ingredients
- Spaghetti (12 oz)
- Cheddar Cheese (2 cups, shredded)
- Olive Oil (2 tablespoons)
- Garlic (4 cloves, minced)
- Onion (1 medium, diced)
- Chicken or Vegetable Broth (4 cups)
- Diced Tomatoes (1 can, 14 oz)
- Italian Seasoning (2 teaspoons)
- Spinach (2 cups, fresh)
- Salt and Pepper to taste
- Red Pepper Flakes (optional, to taste)
Instructions
- Sauté the Aromatics: In a large pot, drizzle olive oil and place it over medium heat. Once shimmering, toss in diced onion and garlic. Cook until soft and fragrant (about 3-4 minutes).
- Stir in the Tomatoes and Seasonings: Add diced tomatoes along with Italian seasoning, salt, and pepper. Stir and let simmer for about 5 minutes.
- Add the Broth and Spaghetti: Pour in chicken or vegetable broth. Once bubbling, gently add spaghetti, ensuring it’s submerged. Stir occasionally to prevent sticking.
- Cook the Pasta: Cover pot and let cook for about 10-12 minutes, or until al dente, stirring every few minutes.
- Incorporate the Spinach and Cheese: Once spaghetti is right, toss in fresh spinach and stir until wilted. Gradually add shredded cheddar cheese, stirring until melted.
- Adjust Seasoning: Taste and adjust seasoning as needed. Add red pepper flakes if desired.
- Serve it Up: Scoop into bowls and serve with extra cheese or fresh herbs on top, if desired.
