Ingredients

  • 1 pound Pasta (rotini, fusilli, or penne)
  • 1 pint Cherry Tomatoes
  • 1 medium Cucumber
  • ¼ medium Red Onion
  • ½ cup mixed Fresh Herbs (basil, parsley, dill)
  • ½ cup Olive Oil
  • ¼ cup Red Wine Vinegar
  • 1 cup Feta Cheese (crumbled)
  • Salt & Pepper (to taste)
  • Optional Add-ins: Olives, artichokes, or cooked chicken

Instructions

  1. Boil water in a large pot and add salt.
  2. Cook the pasta according to package instructions until al dente (8-10 minutes).
  3. Drain the pasta and rinse under cold water.
  4. Chop the cherry tomatoes, cucumber, and red onion into bite-sized pieces.
  5. Finely chop the fresh herbs.
  6. Mix together olive oil, red wine vinegar, salt, and pepper in a bowl.
  7. Toss the drained pasta, chopped vegetables, and fresh herbs together.
  8. Add the feta cheese and gently mix until well combined.
  9. Chill the pasta salad in the fridge for at least 30 minutes before serving.
  10. Serve in a rustic bowl and enjoy!
