Ingredients

- 1 pound Pasta (rotini, fusilli, or penne)
- 1 pint Cherry Tomatoes
- 1 medium Cucumber
- ¼ medium Red Onion
- ½ cup mixed Fresh Herbs (basil, parsley, dill)
- ½ cup Olive Oil
- ¼ cup Red Wine Vinegar
- 1 cup Feta Cheese (crumbled)
- Salt & Pepper (to taste)
- Optional Add-ins: Olives, artichokes, or cooked chicken
Instructions
- Boil water in a large pot and add salt.
- Cook the pasta according to package instructions until al dente (8-10 minutes).
- Drain the pasta and rinse under cold water.
- Chop the cherry tomatoes, cucumber, and red onion into bite-sized pieces.
- Finely chop the fresh herbs.
- Mix together olive oil, red wine vinegar, salt, and pepper in a bowl.
- Toss the drained pasta, chopped vegetables, and fresh herbs together.
- Add the feta cheese and gently mix until well combined.
- Chill the pasta salad in the fridge for at least 30 minutes before serving.
- Serve in a rustic bowl and enjoy!
