Description

A nostalgic and refreshing green pea salad that combines crisp peas, crunchy water chestnuts, cheese, and a creamy dressing—perfect for potlucks and family gatherings.


Ingredients

  • 2 cups frozen peas, thawed
  • 1 can water chestnuts, sliced
  • 1/2 small red onion, finely chopped
  • 1 cup cheddar cheese, shredded
  • 1 cup mayonnaise
  • 12 tablespoons sugar
  • Salt and pepper, to taste
  • Optional: 1/2 cup bacon bits

Instructions

  1. Thaw the frozen peas and drain well.
  2. Finely chop the red onion, soaking in cold water if needed to mellow the flavor.
  3. Slice the water chestnuts if using whole ones.
  4. In a mixing bowl, combine peas, water chestnuts, and red onion, folding gently.
  5. Add shredded cheddar cheese and toss lightly.
  6. In a separate bowl, whisk mayonnaise and sugar until smooth, then pour over the pea mixture.
  7. Season with salt and pepper to taste and mix well.
  8. Fold in bacon bits if using.
  9. Cover and chill in the refrigerator for at least 1 hour before serving.
  10. Serve in a bowl, garnished with extra cheese or herbs if desired.

Notes

Chilling the salad enhances the flavors. You can also substitute mayonnaise with Greek yogurt for a lighter version.
