Ingredients

- 2 cups frozen peas, thawed
- 1 can water chestnuts, sliced
- 1/2 small red onion, finely chopped
- 1 cup cheddar cheese, shredded
- 1 cup mayonnaise
- 1–2 tablespoons sugar
- Salt and pepper, to taste
- Optional: 1/2 cup bacon bits
Instructions
- Thaw the frozen peas and drain well.
- Finely chop the red onion, soaking in cold water if needed to mellow the flavor.
- Slice the water chestnuts if using whole ones.
- In a mixing bowl, combine peas, water chestnuts, and red onion, folding gently.
- Add shredded cheddar cheese and toss lightly.
- In a separate bowl, whisk mayonnaise and sugar until smooth, then pour over the pea mixture.
- Season with salt and pepper to taste and mix well.
- Fold in bacon bits if using.
- Cover and chill in the refrigerator for at least 1 hour before serving.
- Serve in a bowl, garnished with extra cheese or herbs if desired.
Notes
Chilling the salad enhances the flavors. You can also substitute mayonnaise with Greek yogurt for a lighter version.
