Ingredients

- 2 slices of rustic bread (sourdough or ciabatta)
- 2 slices of fresh mozzarella cheese
- 2 tablespoons of pesto sauce
- 1 tablespoon of unsalted butter
- 1 teaspoon of garlic powder (optional)
- 2 tablespoons of grated Parmesan cheese (optional)
Instructions
- Gather your ingredients and slice your rustic bread about ½-inch thick.
- Spread a layer of pesto on one slice of bread and layer with fresh mozzarella and Parmesan.
- Soften butter and mix in garlic powder; spread it on the outside of both slices of bread.
- Preheat a skillet over medium heat and grill the sandwich for 3-5 minutes until golden brown.
- Flip the sandwich and grill the other side for another 3-5 minutes until browned and melty.
- Remove from the skillet, let rest for a minute, then slice and serve with marinara sauce if desired.
